Always measure internal temperatures in the thickest part of the meat using a calibrated digital probe thermometer, verifying it meets the following USDA parameters:
- Beef, Lamb, Veal (Steaks, Roasts): 145°F (63°C) with a mandatory 3-minute rest phase.
- Fresh Pork Chops / Tenderloin: 145°F (63°C) with a mandatory 3-minute rest phase.
- Ground Beef, Pork, Lamb: 160°F (71°C) with no rest phase.
